Author Bio

Susie Martinez is the elementary director of Southern Gables Church in Littleton, Colorado. She graduated from Taylor University with a degree in social work. The mother of two, Susie and her family live in Colorado.

Vanda Howell attended Colorado State University and now serves as the administrator for the performing arts ministry at her church and sings on the praise team. A real estate appraiser, Vanda and her family live in Colorado.

Bonnie Garcia is a graduate of Grace College. A pediatric nurse, she is also the busy mother of three sons. Bonnie and her family live in Colorado.

Susie, Vanda, and Bonnie are the authors of Don't Panic--Dinner's in the Freezer and Don't Panic--More Dinner's in the Freezer.

    Don't buy this cook book. The recipes don't have enough information or explanation of what ingredients are needed, or how to prepare them. . I tried making the "Spanish Rice".The instructions for the recipe are vague. When you get to the store and start looking for "1 10 ounce can of tomatoes with chipotle" the brand named in the book wasn't there, the book didn't say if the tomatoes should be plum, diced, sliced, etc. So I chose diced. And, bought a separate can of chipotles. It said "long grain Rice" but not white rice. So, I used brown rice and it took an extra 35 minutes and extra water to cook. It turned out ok, but was bland since the tomatoes and onions had been cooked down. My sister tried the "garlic chicken". The recipe did not tell her to peel the garlic or use precut garlic from a jar, so the chicken didn't taste garlicky, and it was yucky to have garlic peel in the chicken, and her family teased her about this, but preparing garlic will add about five minutes to the prep time, so maybe that's why it wasn't written into the recipe. Beginning cooks: Don't buy this book. Cooks who are good in the kitchen, but don't have a lot of experience following recipes: get another book that will teach you how. The food combinations are good, but you can find the recipes in a lot of other books and get much better results, with a lot less agony in the kitchen, and comments about your cooking from your family. Don't by this book. I'm returning my copy.

    The front cover of this softbound cookbook is so beautiful! Can we say, "drooling" here? In all fairness, though, I want you to be aware that this cookbook doesn't contain any photos or drawings inside. For those of you who absolutely must have photos or graphics in your cookbooks, this may not be the cookbook for you.

    Some of these meals are designed to make large batches - if desired - so the ingredients lists on the recipes are two-fold. The regular list is designed for 4-6 servings, while the second "large batch" list is designed for making extra for a large crowd or putting away some freezer meals for another busy evening.

    If you are a "whole foods" person, some of the recipes contain convenience food ingredients. You can adapt the recipe to fit your needs, but it will probably take longer to prepare many of the recipes than the directions say.

    I personally have enjoyed the recipes we have tried. If you need a comparison as to the style of this cookbook, I'd say that the style of cooking is similar to Pioneer Woman's cookbooks, without the photos. If you are familiar with Pioneer Woman, you'll know what I mean!

    I would also like to note a pet peeve of mine in recipe cookbooks. When the preparation times are listed for recipes, and the ingredients list calls for "cooked and diced chicken" or already prepared meats or cooked pastas, etc., I think the prep time to cook those items needs to be added to the time in the recipe. Only those who have unlimited funds to spend on groceries are going to be able to afford to purchase "already cooked and sliced or diced" meats, etc. For the average American family, this isn't practical because it is too expensive. So when I made both of these recipes, I needed to add an extra 20 minutes to the prep time because I needed to cook chicken and ground venison sausage.

    Other than that, Don't Panic: Quick, Easy, and Delicious Meals for Your Family is a great option to fast food! I'm looking forward to trying additional recipes from this cookbook!

    I don't feel I have the same amount of time to cook the home-made meals my mom or grandma used to make. Year after year the external obligations on my time grow and grow. I haven't had the opportunity to try more than two of the recipes in this book yet, but the two I did try were pretty tasty. We tried 'Jack's Sausage and Vegetable Fettuccine' on page 103 and then Shirley's Mini Meatloaves on page 148. My husband especially loved this one as I still have a mini loaf in the freezer for later! The one thing I would change next time I make it is to use a food processor to chop up the green peppers and onions to get them smaller than I was able to by hand. (It would also be faster!)

    Overall, this is a nice cookbook for busy moms because it contains a variety of time-saver recipe options. Some recipes are just easy. Some recipes might not be easy, but makes extra to freeze (which is nice and easy later). And some you ready for the crock-pot so that you can eat it quickly later (possibly when you return home from a ballgame or scout meeting - for instance.)

    Not every mom loves crock-pots, or freezing ... though most of us love quick, so there is a little something in here for everyone - with a lot of kid-friendly options.

    I love cooking, cookbooks, and new recipes. I had never had a chance to review a cookbook before so I was really excited to test out some recipes on my family (which includes 2 very picky kids)!

    Before I get to the recipes, let's talk about the layout of the book. It's very cook-friendly. It has easy to find sections and includes the following sections:

    •Small Bites and Appetizers

    •Breakfast, Breads, and Brunch

    •Soups, Salads, and Sides

    •Pasta, Pasta

    •Crockpot Collection

    •Easy Baked Oven Dishes

    •Grate Grills and Marinades

    •Savory Skillets and Quick Sautes

    •Desserts Divine

    It also has a very helpful measurements, equivalents, weights, and servings section that helps take out all of the guesswork and in some cases, experimentations. It also has the nutrition information, which I find extremely helpful. It makes me want to cook out of it even more because there's no guessing has to what I'm eating and what a serving size is.

    In this book, we tried the Chicken Fajitas Garcia with the Easy Spanish Rice. We had a hard time choosing because this book had recipes for such a wide variety of foods. It had Mexican, Asian, American and then whatever you want to call soups, dips, and desserts. I'm sure I didn't use exact measurements in my testing because I never do, but it was great! I'm definitely making it again and am looking forward to cooking out of this book many more times. Now, here's the moment I know you've been waiting for.....A FREE RECIPE!

    Chicken Fajitas Garcia

    3 boneless, skinless chicken breasts, cut into strips

    MARINADE:

    1 clove garlic, minced

    1-1/2 tsp. season salt

    1-1/2 tsp. cumin

    1/2 tsp. chili powder

    1/2 tsp. crushed red pepper

    1 Tablespoon olive oil

    2 Tablespoons lime juice

    FAJITAS:

    1/4 cup olive oil, divided

    1 onion, sliced

    1 green pepper, sliced

    FOR SERVING:

    flour tortillas, warmed

    salsa

    cheese tomato

    lettuce

    avacado

    This recipe yeilds 3 servings. Prep time is 10 minutes. Total time is 2 hours and 30 minutes.

    DIRECTIONS:

    Combine all marinade ingredients in medium bowl; add chicken and toss to coat. Marinade chicken in refrigerator for 2-3 hours. In medium skillet, heat 2 Tablespoons olive oil and saute onion and green pepper until lightly browned. Remove from pan. Add remaining 2 Tablespoons olive oil and saute chicken and marinde in the same skillet until chicken is browned and cooked through, about 10 minutes. Return vegetables to pan and mix until well combined. Spoon fajita mixture into warm flour tortillas and top with favorite ingredients.

    Calories: 239 per serving. Total fat is 11.8g. Protein is 17g.

    It has contains instruction for freezing this meal, but you'll have to get the book for that!
