Through this search I have come to find out that interlinears are apparently no longer published. (There is an ESV reverse interlinear but it changes the word order of the Greek to fit the English.)
So my search brought me to this New Testament. I am already in love with the ESV as a translation and that allowed me to look at this as one of the most viable options.
When I got it, it out did my expextations. Yeah, the paper is a little thin but no thinner than other Bibles that I read from. The text from the other page is only noticeable on the ESV side because half the page is blank. Other than that it is a beautiful volume and I am super excited to have it and be able to use it.

As you hold the book open, the Greek text and complete apparatus appear on the left side and the ESV of the matching passage on the right (generally with 1/3 of a page blank at the bottom, handy for notes). It essentially gives one the "large print" edition of the Greek text (so it's mercifully easier on the eyes) for a fraction of the cost of the large print edition, with a bonus crutch (er, I mean, facing-page English translation :) ). The only drawback is that the pages are necessarily so thin that the print from behind is also visible. Still, a beautifully produced edition with no regrets from this user.
