WHITE CHRISTMAS PIE
Soak: 1 Tbs. Knox gelatin in ¼ cup cold water
Mix in a saucepan:
½ cup sugar
½ tsp. salt
4 Tbs. Flour
1 ½ cups milk
Cook over low heat, stirring until it boils. Boil 1 minute; remove from heat. Stir in the softened gelatin. Cool. When partially set, beat with beater until smooth.
Blend the following into the cooled mixture above:
¾ tsp. vanilla
¼ tsp. almond extract
½ cup whipping cream, whipped until stiff
In a separate bowl: beat 3 eggs whites; add ¼ tsp. cream of tartar. Beat until stiff. Beat in ½ cup sugar until soft peaks form. Fold this mixture into the mixture above. Then fold in 1 cup coconut. Divide equally into two baked pie shells and serve.
